Spinach Mac 'n Cheese

Tonight for dinner I whipped up a delicious treat! I found the original recipe here, but I adapted it a little. Originally it was meant to make individual mac n' cheese cups, but since I just wanted to make regular mac 'n cheese I left out the eggs which were meant as a binding agent.

Overall I found this to be a really easy recipe for mac 'n cheese, why would you even need the boxed stuff??

Ingredients:
4 c cooked whole wheat macaroni
1 T butter
1 T flour
1 c skim milk
1 garlic clove, minced
6 oz sharp cheddar cheese, shredded
1 (10 oz) package of frozen chopped spinach, defrosted, drained and patted dry
Salt & pepper to taste
Directions:
1. In a sauce pot, melt the butter.
2. Add the flour, and whisk until starting to brown.
3. Stir in the milk and garlic and raise the temp to bring the mixture to just under a boil.
4. Add the cheese and whisk mixture together until thoroughly combined.
5. In a large bowl, combine the pasta, spinach, cheese sauce,  and salt and pepper.



Love the addition of spinach for extra vitamins/fiber. Plus in my eyes adding a vegetable means it can be a one pot meal- which means less dishes- BONUS! I didn't even add any salt and it didn't need it, so healthy!
